PUMPKIN PIE: THE GOURMET RECIPE THAT WILL PLEASE EVERYONE

There pumpkin pie is a wonderful dessert, formed from a setting of shortcrust pastry garnished with a velvety cream made from pumpkin and crème fraîche.

In reality, you can make a multitude of desserts with pumpkin. By adding its flesh to a dough soft cake, you will obtain an original and irresistible result. We recommend that you add a little cinnamon for a warm and enveloping taste — the pumpkin and cinnamon combination is a real success!

Origin of Pumpkin Pie

Prepared this way, pumpkin pie is of American origin. It is mainly enjoyed in the fall and winter, during Halloween, at Thanksgiving or even at Christmas. By cooking it, your kitchen will be filled with a wonderful aroma of sugar and cinnamon.

Which pumpkin to choose

The heart of this tart should remain firm and not watery. Use a pumpkin with compact flesh, such as Delica or the mantovana, and prefer cooking in the oven.

Ingredients

For the shortcrust pastry:

  • 330 g flour
  • 165 g of butter at room temperature
  • 150 g caster sugar
  • 2 egg yolks + 1 whole egg
  • Lemon zest
  • 1 pinch of salt

For the garnish:

  • 850 g of flesh pumpkin cooked
  • 100 g of liquid cream fresh
  • 1 egg
  • 85 g caster sugar
  • 1 teaspoon of ground cinnamon
  • 1 pinch of salt

To serve:

  • Whipped cream or vanilla ice cream

Preparation

  1. Mix the sugar with the grated lemon zest. In a food processor or by hand, work the butter and sugar until you obtain a cream.
  2. Add the beaten eggs, then the flour and salt. Form a ball, wrap and leave to rest for 2 hours in the refrigerator.
  3. Meanwhile, cook the pumpkin for 30 minutes in the oven. Leave to cool then mix with the eggs, sugar, cinnamon and salt. Add the liquid cream with a spatula.
  4. Spread the shortcrust pastry to 3 mm and fill a springform pan (26 cm). Pour the pumpkin cream, smooth and bake at 170°C for 35 min.
  5. Let cool before serving. For a clean cut, dip the knife in hot water and wipe it before each slice.

How to Serve Pumpkin Pie

Serve it with whipped cream or a scoop of vanilla ice cream. A delicious, elegant dessert perfect for an autumn dinner.
